Strongbow Artisanal Blend Mojito

(ABV: 10%) Calories per serving: 200

8 mint leaves, plus garnish
5 basil leaves
1 teaspoon sugar
1 Tablespoon lime juice
2 oz. white rum
3 oz. Strongbow Artisanal Blend Hard Apple Cider
Lime sugar for rim of glass

Dip the top of the glass in water and cover with lime/sugar mixture. In a cocktail shaker muddle mint, basil, sugar, and lime juice. Add ice and rum, shake well. Strain into ice filled glass and top with Strongbow Artisanal Blend Hard Apple Cider. Garnish with mint sprig.

Strongbow Artisanal Blend Apple Butter

3½ lbs. Mutsu apples (or Golden Delicious)
1 bottle Strongbow Artisanal Blend Hard Apple Cider
¾ cup sugar
½ teaspoon salt
6 allspice berries
3 cloves
1 cinnamon stick
2-3 Tablespoons lemon juice

Peel, core and cut the apples into cubes. Put into a large Dutch Oven along with the Strongbow Artisanal Blend Hard Apple Cider, sugar and salt. Bring to a boil, then reduce heat and simmer for about 45 minutes until apples are soft enough to blend.

Transfer apples to the bowl of a blender or food processor and blend until smooth (taking caution when blending hot items.) Return the applesauce to your pot and then add your spices. Over a low heat so as not to scorch your apples, slowly cook your mixture for about 2-2½ hours, stirring often until the apples have become quite thick and brown. Remove from heat and cool. Serve with aged cheddar and crackers.
